Vodka and gin start out identical. Same base ingredient, same fermentation, same distillation. Then gin gets one more step — it's redistilled with juniper and other botanicals — and that single step is the entire difference. Here's what changes, and why a vodka martini and a gin martini taste like cousins, not twins.
The legal definitions
- Vodka. A neutral spirit distilled to high proof, filtered, and bottled. By US law, vodka must be "without distinctive character, aroma, taste, or color." In practice, craft vodkas push back against that rule — they retain some character of the base ingredient.
- Gin. A neutral spirit (essentially vodka) that's been redistilled with juniper berries as the dominant flavor, plus a botanical bill of other plants — coriander, citrus peel, angelica root, orris root, and dozens of other options.
How they taste
Vodka, drunk neat, is a study in subtlety — the base ingredient (grain, potato, dates, grapes) shows through faintly, but the dominant impression is clean, smooth, neutral. Craft vodkas like our date-based Oasis push the envelope here, retaining more character than mass-market vodkas, but the family resemblance to other vodkas is still strong.
Gin is unmistakable. Juniper is the legally required dominant note — the piney, slightly resinous flavor that makes a gin a gin. Around the juniper, every gin is different. London Dry gins are juniper-forward and dry. Plymouth gins are softer and earthier. New Western gins (like our Nopalera) lean on local botanicals — prickly pear, citrus peels, herbs — and feel less British, more like the place they're from.
