Vodka can be made from almost anything that ferments — grain, potatoes, grapes, sugar cane, even milk whey. Date-based vodka is rare, almost unheard of in the United States. Hollywood Distillery's Oasis Vodka is distilled from California dates, which gives it a softness and slightly floral character that grain vodkas don't have. Here's how it works and why it tastes the way it does.
Why dates
Dates are extraordinarily sugar-dense — a Medjool date is roughly 65% sugar by weight, which is higher than honey. Sugar is the raw material yeast needs to make alcohol. So a date is, biochemically, an unusually efficient base for fermentation. The historical reason most vodka isn't made from dates is supply: dates have always been more expensive than corn or wheat, and grain vodka could be made anywhere grain grew. California changed that. The Coachella Valley produces some of the best dates in the world, and at the right scale, the math works.
How it's made
The process matches grain vodka in shape but differs in inputs:
- Date prep. Whole California dates arrive at the distillery, get checked for quality, and are weighed by the batch.
- Fermentation. The dates are mashed and combined with water and yeast in our 1,875-gallon stainless fermenters. Over three to five days, the yeast converts the date sugars to alcohol.
- Distillation. The fermented date wine is run through our 1,000-gallon copper Vendome pot still. Pot distillation (rather than column) keeps some of the date character in the finished spirit.
- Filtration and proofing. The high-proof distillate is filtered and cut with clean water down to 80 proof.
- Bottling. Hand-finished, labeled, capped on our bottling line.
How it tastes
Side by side with a grain vodka, the differences are obvious. Date vodka is rounder on the palate, slightly floral, almost honeyed at the back end. There's no rough edge — no astringent finish, no harsh alcohol burn. It mixes beautifully (the softness lifts a martini, smooths a Moscow mule) but it's also clean enough to drink neat over a single ice cube.
If your reference for vodka is a Tito's or a Grey Goose, Oasis is going to taste like a different category. Closer in spirit to an artisanal sake or a top-shelf shochu than to a wheat-grain vodka.
Is it gluten-free?
Yes — dates aren't a grain, and there's no wheat, rye, or barley involved in our process. Date-based vodka is naturally gluten-free, which makes it a strong option for guests who can't drink grain spirits. (Even most wheat vodka is technically gluten-free after distillation, but for guests who avoid grain at any stage, date vodka is unambiguous.)
